When an iPhone checks for a software update, it sends a request to Apple's Pallas server at gdmf.apple.com, which responds with a signed asset catalog describing the available delta-update package. The delta-package method — which Apple has used since introducing over-the-air updates in iOS 5 — downloads only the firmware components that differ from the installed version, rather than the full operating system image, which is why an iOS point-update weighs a few hundred megabytes rather than gigabytes. The download is verified against a cryptographically signed manifest before installation begins.
For cellular delivery, Apple's system adds a second condition: the device must have "Allow More Data on 5G" enabled in Settings → Cellular → Cellular Data Options → Data Mode.
